FRESH CRUNCH GOLDEN BEETS
As we shift into fall, root veggies are all the rave. Root veggies grow underground- think potatoes, carrots, onions, garlic, ginger, yams, and BEETS. Root veggies absorb a great number of nutrients from the soil. Beets are considered a superfood and are among the healthiest foods on the planet. They’re full of beta-carotene and betalains (remember this word), which are antioxidants and anti-inflammatory.
Eating root veggies is a wonderful way to connect with the earth and tap into grounding energy. Beets are best in season late summer through fall.
AREN’T BEETS RED?
The pigments that give beets their rich colors are a type of antioxidant called betalains. Red beets and golden beets have different types of betalains that each have a different pigment.
WHAT’S THE DIFFERENCE?
For starters, golden beets are sweeter in taste and less earthy in flavor. Despite a difference in color, both red and yellow beets function as equally as potent in antioxidants and anti-inflammatory agents.
Beets are a MAJOR source of potassium - the mineral that lowers blood pressure regulates fluid balance and controls the activity of the heart and other muscles.
Humans require at least 100 milligrams of potassium daily to support key functions- and beets have 442 mg per serving.
